Greek yoghurt chocolate loaf

This Greek Yoghurt Chocolate loaf has more protein than your regular loaf and is the perfect lunchbox snack or mid-week treat!



For your loaf you will need:

  • 1 cup of sugar

  • 2 large eggs

  • 1 cup of Village Greek Yoghurt

  • 1 ¼ plain flour

  • ½ cup cocoa powder

  • 1 teaspoon of baking powder

  • ½ teaspoon of baking soda

  • ¼ teaspoon salt

  • 1 teaspoon vanilla extract

  • ¼ cup of milk

  • ½ cup chocolate chips

  • ⅓ cup of coconut, olive or any other vegetable oil of choice

Method:

  1. Preheat your oven to 175 degrees celsius and spray a 9 X 5-inch loaf pan with nonstick baking spray

  2. In a medium bowl whisk together the eggs, vanilla and Village Greek Yoghurt. Then add the oil, sugar and milk and whisk together until a smooth.

  3. In a large bowl whisk together the flour, cocoa powder, baking soda and salt.

  4. Transfer the liquid mixture into the flour mixture. Then using a spatula mix until incorporated, allowing the batter to remain lumpy.

  5. Add the chocolate chips and mix in.

  6. Transfer the batter into the prepared pan, smoothing the top with a spatula. Bake for 45 minutes then cover with foil and bake for 15 more minutes or until the toothpick or metal rod inserted in the center comes out clean. Cool in the pan on a wire rack for 10 minutes, then remove from the pan and let to cool for 30 more minutes before slicing and serving.
