Granola and yoghurt is the perfect duo! So here we have the perfect recipe for you!

You will need…
Dry ingredients:
4 cups of rolled oats
1 cup of coconut flakes
1 cup of raw chopped nuts (e.g. almonds, pecans, sunflower seeds, pumpkin seeds)
½ cup of dried fruit (e.g. apricots or raisins)
1 tbsp of cinnamon
1 pinch of salt
Wet ingredients:
⅓ cup of honey, maple syrup or agave
⅓ of melted butter
2 egg whites
1 ½ tsp of vanilla essence
Method:
Preheat oven to 140 celsius and line a large baking tray with baking paper
Combine all wet ingredients excluding the eggs into a large bowl
Add all dry ingredients into the bowl and combine
Whisk egg whites with a fork until foamy
Mix all the wet and dry ingredients together and add in the egg whites
When all combined spread the granola onto your tray
Bake for 45 minutes until golden brown – (check at 30 mins if need be)
Remove granola and let it cool down – the colour deepens and it firms up
Once cool break into clusters and store in a airtight container
