Blueberry and Greek Yoghurt Muffins

The ultimate lunch box treat addition; Blueberry and Yoghurt Muffins.



Ingredients:

  • 1 3/4 cups (460g) Village Dairy Greek yoghurt

  • 1/4 cup black chia seeds

  • 1/2 cup rolled oats

  • 2 cup wholemeal flour

  • 3 tsp baking powder

  • 1/2 cup caster sugar

  • 1/4 cup olive oil

  • 2 eggs

  • 1 cup frozen blueberries


Method:

  1. Preheat the oven to 180C

  2. Line muffin tin tray

  3. Place chia seeds, oats, wholemeal flour, baking powder and sugar in a large bowl

  4. Whisk the oil, eggs and yoghurt together in a separate bowl

  5. Add the egg mixture to the dry ingredients and stir to combine

  6. Add the blueberries and fold in and mix through

  7. Spoon the mixture evenly into the paper cases

  8. Bake for 20-25 minutes or until golden

  9. Leave to cool in the tin for 5 minutes

  10. Enjoy!
