Grilled chicken wraps are the perfect fuss-free lunch or dinner to enjoy this summer. Assembly will take mere minutes and the ingredients can even be prepped ahead making this dish even easier!
Grilled Chicken Wraps with Yoghurt
Ingredients
For the wraps
1 ½ cups of Village Dairy Natural Yoghurt
4 wraps warmed
1 Sliced red onion
1 red capsicum
1 punnet halved cherry tomatoes
2 thinly sliced radishes
½ cup of lightly packed basil leaves
Your choice of lettuce
For the chicken
3 chicken breasts halved, horizontally
2 tbsp olive oil
2 tbsp lemon juice
1 clove of crushed garlic
2 tsp oregano
1 tsp cumin
2 tsp salt
Method
Combine all the marinade ingredients in a bowl, then coat the chicken in the marinade. Cover and allow to marinate for up to 24 hours in the fridge (30 minutes minimum).
Slice vegetables.
Cook chicken in a hot pan/griddle pan until golden brown on both sides and almost cooked through. Add sliced capsicum and onion to the pan and cook for a further 4 minutes. Remove from the heat and allow to rest for 5 minutes before slicing the chicken into 3 cm pieces.
Serve the grilled chicken with yoghurt, capsicum, radish, cherry tomatoes, onion and basil in a warmed wrap.
