Granola Yoghurt Cups

Looking for a twist on the classic granola and yoghurt combo? We recommend baked granola cups with yoghurt and fresh fruit. It’s tasty, easy and a perfect summer snack!




Ingredients:

For filling:

  • Village Dairy Greek Yoghurt

  • Your choice of fruit


For cups:

  • 1/2 cup honey

  • 1 1/2 cups rolled oats

  • 1/4 cup chia seeds

  • 1 medium-sized banana, mashed

  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt


Method:

  1. Preheat the oven to 175°C. Grease a standard 12-cup muffin tin generously with cooking spray or butter.

  2. In a medium bowl, combine the oats, chia seeds, mashed banana, cinnamon, salt and honey to create a yummy granola mix. Stir until well combined.

  3. Microwave the honey for 20 seconds to make it easier to stir into the granola.

  4. Divide the granola mixture among the muffin tin cups and using a measuring cup, press the mixture down into each cup using a spoon so that it comes up the sides to form a bowl shape.

  5. Bake the granola cups for 12 to 15 minutes or until golden brown. Remove them from the oven and, if needed, immediately reshape the centre wells by pushing the measuring cup or a shot glass into each cup.

  6. Allow the granola cups to cool in the pan for 30 minutes then run a sharp knife around the edges of each cup to release it from the pan.

  7. Fill each granola cup with Village Dairy yoghurt and fresh fruit and serve.
