Greek Yoghurt Pancakes

You've heard of pancakes, but have you heard of Greek Yoghurt Pancakes!


Ingredients:

  • ¾ cup of Village Dairy Greek Style Thick and Creamy Yoghurt

  • 1 ½ cups of all purpose flour

  • 2 teaspoons of baking powder

  • 2 eggs

  • 1 teaspoon of vanilla essence

  • ¾ cup milk

  • 2 tablespoons of sugar

  • Pinch of salt


Method:

  1. In a large bowl, whisk together the flour, baking powder, salt and sugar.

  2. In a small bowl, whisk together the milk, eggs and vanilla extract. Pour the liquid mixture into the flour mixture and stir until combined.

  3. Add in the yoghurt and stir.

  4. Heat up a pan and spoon the batter onto the pan

  5. Cook until bubbles form around the edges of each pancake (about 3 minutes).

  6. Flip and cook. Transfer the pancakes to a warm plate.

  7. Repeat with the remaining batter.

  8. Serve pancakes topped with your favourite fruits and syrups.


Topping suggestions: Maple syrup, powdered sugar, honey, nutella, raspberries and blueberries.
