You've heard of pancakes, but have you heard of Greek Yoghurt Pancakes!
¾ cup of Village Dairy Greek Style Thick and Creamy Yoghurt
1 ½ cups of all purpose flour
2 teaspoons of baking powder
1 teaspoon of vanilla essence
¾ cup milk
2 tablespoons of sugar
Pinch of salt
In a large bowl, whisk together the flour, baking powder, salt and sugar.
In a small bowl, whisk together the milk, eggs and vanilla extract. Pour the liquid mixture into the flour mixture and stir until combined.
Add in the yoghurt and stir.
Heat up a pan and spoon the batter onto the pan
Cook until bubbles form around the edges of each pancake (about 3 minutes).
Flip and cook. Transfer the pancakes to a warm plate.
Repeat with the remaining batter.
Serve pancakes topped with your favourite fruits and syrups.
Topping suggestions: Maple syrup, powdered sugar, honey, nutella, raspberries and blueberries.
