Matar Paneer with Capsicum

A classic Indian dish that makes for a perfect midweek meal. Our recipe serves 2 people, so adjust accordingly. ENJOY!



INGREDIENTS:

· 1 tbsp of sunflower oil

· ½ cup of chopped onions

· 1 tsp of chopped ginger

· 2 garlic cloves

· 2 tbsp of coriander leaves

· 4 large ripe tomatoes

· 150g frozen peas

· 1 red capsicum, chopped

· 1 tsp of garam masala

· 1 green chilli, finely sliced

· 1 tsp of turmeric

· Rice or naan bread to serve


METHOD:

1. Heat the oil in a frying pan over high heat

2. Chop the paneer into 2-3cm cubes and add into the pan

3. Fry until paneer starts to brown around the edges

4. Flip over the paneer until it is brown on each side

5. Remove paneer from the pan and place on some paper towel

6. Put the ginger, turmeric, coriander and chilli in the pan and fry for 1 minute

7. Peel and chop tomatoes

8. Add tomatoes and leave to simmer

9. Add peas and capsicum, and simmer for another couple of minutes

10. Season with salt and pepper accordingly

11. Stir in the paneer and sprinkle over garam masala

12. Serve with your choice of rice or naan bread



TIP: If the sauce is too thick, add a splash of water. You can also add sugar for a slightly sweeter taste.
