Yoghurt Christmas fruit loaf
90 grams of butter, softened
2 teaspoons finely grated orange
165 grams caster sugar
2 cups of wholemeal self raising flour
1 cup of Village Natural yoghurt
1 cup chopped raisins
1 cup finely chopped dried figs
⅓ cup orange juice
Preheat oven to 180 degrees celsius. Grease 14cm x 21cm loaf pan. Line base and sides with baking paper and extending paper 5 cm above the long sides.
Beat butter, rind, sugar, eggs, sifted flour, yoghurt and juice in a medium bowl with an electric mixer on low speed until combined. Stir in the fruit
Pour mixture into pan and cover with foil. Bake for an hour and 15 minutes and then remove the foil. Bake for a further 15 minutes. Stand loaf in pan for 10 minutes before turning it onto a wire rack to cool
Enjoy on its own or with a dollop of yoghurt!
